Vietnamese Corn Sautee (Bắp Xào)

Ingredients
2 Ears of Sweet Corn
4 Stalks of Scallions
4 Stalks Cilantro
Olive oil
1.5 Teaspoon Nouc Mam Chay
1 Tablespoon Butter
1 Teaspoon Black Pepper
1/4 Cup Dried Shrimp (optional)
Instructions
- Soak dried shrimp in cold water for about 10mins, discard the water afterward, and roughly chop them up then set them aside.
- Shave corn kernels and set them aside.
- Chop spring onions and cilantro and set aside.
- In a sauté pan with medium heat, heat oil and add chopped dried shrimp and cook for about 1min.
- Add corn kernels and continue to cook for another 2-3mins.
- Add butter, Nước Mắm Chay, black pepper, and chopped herbs, and continue to cook for another 2 mins.
- Remove from heat and ready to serve!
